OK so I'm not a big fan of any type of salad thats not leafy green, made with lettuce and cheese and whatnot... so I don't know how to make this stuff

Anyone got a good recipe?

Dice and boil potatoes.
Drain.
Boil eggs.
Peel.
Mix with Mayo and salad pickles.

OK ok..now..let's be fair here..LF's pretty good in the kitchen, BUT then again..she'll tell you she don't like to cook.
Sooo take that recipe with a grain of salt.......HINT HINT!!..you do need some spices..

Good ones to add are..salt, pepper..you don't have to use eggs if you don't want to..it's optional..some people add mustard (a tad) to their potatoe salad...some people add celery seed..or diced up celery.......or black olives, or green olives..
One of the best potatoe salads I ever had had diced up apples in it too! YUM YUM YUM!..(it was potatoes..diced/boiled till done..mayo and DILL PICKLES diced, with apple chunks. OHMYGAWD..I thought I'd died and gone to heaven. It was fabulous! It's NOT the norm though. Most people don't expect that..

Then..there's German Hot potato salad..different all together. (with bacon bits etc)

Just do a search for potato salad on ALLRECIPES.COM and you'll find more then you care to read in a day!

Ok, I left off the salt because I was thinking you knew to cook your potatoes in salt, but other than that, that's how I make it and I've had people ask me how I do it! Oh, and you can boil the eggs with the potatoes in the same boiler.

Start with the basics and play with it. Some people add onions or pimentos or some of the stuff that Sage listed. But it's basically potatoes, eggs, mayo and pickles, all chopped up and mixed together.

As far as better the next day goes, that's a matter of personal choice. Personally, I like it when it's first made and the taters are still warm. But I'm weird like that.
