 GYPSY STEW

1 lg. frying chicken, cut into serving pieces
3 yellow onions, peeled & quartered
8 garlic cloves, peeled & halved
2 c. dry sherry
1 c. chicken stock
12 med.-hot green chilies, such as Hatch or poblano, roasted, peeled & seeded
6 lg. ripe tomatoes
Salt to taste
1/2 lb. Monterey Jack cheese

Place
the chicken, onions, garlic, 1 cup of the sherry, and the stock in a
large covered saucepan or Dutch oven. If necessary, add more stock or
water so that chicken is covered. Bring to a boil and simmer, covered,
over low heat for 1 hour. Remove the chicken from the pot with a
slotted spoon and when cool enough to handle, pick the meat off the
bones, discarding the bones and skin.Cut the chilies into chunks. Using 2 forks, tear the tomatoes apart. Add to the chilies and set aside.Add
the chilies, tomatoes and chicken meat to the pot along with the
remaining sherry and salt to taste. Cover, bring to a boil and simmer
for 45 minutes.To serve, cut the cheese into cubes and place them in the bottom of serving bowls. Ladle stew over them and serve.May be made 2 days in advance and slowly reheated.
